A menu is a named subset of the catalogue with optional per-product price overrides, bound to one or more channels (till, kiosk, online, aggregator) and activated by schedule windows (days + a time range + an optional date range). The till switches menus automatically — breakfast until 11:00, happy hour 17:00–19:00, a Ramadan menu by date range — with nobody touching anything.
